The dish 'Panseared fillet of beef with a spring vegetable medley, lyonnaise potatoes and red wine jus'was praised by assessors for the perfectly cooked and trimmed, lean and tender beef, lovely marriage of flavours and excellent presentation. Colour and texture contrasts were outstanding. This was a superbly constructed entry, showcasing exemplary dish components, professional technique and meticulous presentation."
